I'm going to show you how to make wulong (oolong) tea. Now, today, we have two different kinds of wulong. This is a light wulong called Dong Ding Wulong.
This is more similar to green tea, near to the green tea spectrum of colors. The second wulong that we're going to brew is the highly oxidized, the mono-oxidized wulong called Heritage Tie Luo Han Wulong. Now, if you imagine Heritage Tie Luo Han Wulong to be like a Shaolin kung fu monk, then the Dong Ding Wulong is more like a young girl blossoming into womanhood.
They're very different in characteristics. Now, to brew this tea, one would need hot water. The first thing that I'm going to do is to warm the teapot.
I'm now warming the pitcher. I'm putting the Dong Ding Wulong tea into the gaiwan. This is the Heritage Tie Luo Han.
To brew Heritage Tie Luo Han, we need a slightly higher water temperature of about 90 to 95 degrees Celsius. We brew it for no more than 40 to 50 seconds. For the Dong Ding Wulong, we need the water temperature slightly lower, we're talking about 80 to 85 degrees Celsius.
I'm now warming the tea cups. This is the first infusion of Dong Ding Wulong and this is the first infusion of Heritage Tie Luo Han. As you can see, they are of completely different colors.
The Dong Ding is a lighter infusion, is a lighter tea, more similar to green tea and the Heritage Luo Han is more similar to a black tea. Please enjoy these two distinct types of wulong tea. And that's how you make wulong tea. .
