Ingredients

  • 2 medium onions
  • 25 g butter
  • flour
  • salt
  • pepper
  • 1 ltr beef stock

Step 1: Slice and Sweat the Onions

Prepare a pan of beef stock. Add 25g of butter to a separate sauce-pan. Slice 2 medium onions down the middle, then thinly slice the onions evenly. Heat the butter in the pan and add the onions, then cook for 10 minutes on a medium heat.

Step 2: Add the Flour and Beef Stock

Add a sprinkling of flour to the onions and stir. Once the flour and butter have combined, add the beef stock and bring back to the boil. The consistency should be about as thick as single cream. Once the desired consistency is reached, add extra seasoning if necessary and serve.
