Step 1: You will need:

  • 3 eggs, beaten
  • 220 ml vegetable oil
  • 500 g sugar
  • 330 g zucchini, grated
  • 2 tsp vanilla extract
  • 100 g walnuts, chopped
  • 2 tsp cinnamon powder
  • 2 tsp salt
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 420 g all-purpose flour
  • 1 bowl
  • 1 whisk
  • 1 wooden spoon
  • 2 X 20cm or 1 litre bread loaf pans, buttered and floured
  • some toothpicks
  • 1 spoon

Step 2: Preheat the oven

Set the oven to 170ºC (325ºF/ gas mark 3).

Step 3: Begin the dough

Add the eggs into a bowl and whisk them briskly until they become frothy. Add the sugar then pour in the oil, little by little. Incorporate well before adding a little more. Add the vanilla and zucchini and combine together.

Step 4: Mix dry ingredients

Add the baking powder into the bowl of flour, followed by the baking soda, salt and cinnamon. Stir briefly before adding the nuts. Mix everything together.

Step 5: Combine the mixtures

Spoon the flour mix into the egg mixture and mix briefly, to combine and bind only.

Step 6: Bake

Pour the dough into each of the baking pans. Fill each one to three quarters of the way up. Put them into the centre of the oven and bake for roughly an hour.

Step 7: Remove and test

After an hour, remove the bread from oven. Stick a toothpick into the centre each loaf, to see if they are done. It should come out dry and free of dough. If so, remove them out of the pans. Allow them to cool a few minutes, before cutting and serving.

    Can I replace the sugar with equal or another type of (diet?) sugar? If so, how much?

    The recipe says preheat to 325F and the "weight and measure"says oven temp 340F. What should be the temperature when you bake this?

    If I haven't zucchini what kind of vegetable i can use

    I use half canola oil and half olive oil. Also you may cut down the amt of salt and sugar for a lower sugar/sodium recipe.It works fine
