I've got a nice 4 ounce, 3 to 4 ounce portion of South Coast salmon, really, really nice, which I've filleted earlier on over here. Really nice, nice and plump. So now we're going to add some flavor, some texture, and some moisture to our fish.

When it's ready for cooking, all the flavors are there. Here we are, straight to my little bowl here. I've got a spice, it's called nazigorian.

Nazigorian is an Indonesian spice, normally for rice, but I'm going to add it to my fish, which I'm going to do later on. So, a nice bit of soy sauce. If you're really unsure what to add to fish or to chicken or that sort of stuff, think region.

Think Thai. Think Italian. Just think of an area of a country and hone into their food.

You can use them as spices to your fishes so, a good little tip there. I'm going to go more Asian, Indonesian so I've got my soy sauce. I've got a nice bit of curry under here which I'm going to break through.

Really, really nice. We are looking to marinate our fish for about, maybe about five minutes. We don't want to overdo it.

We don't want to cook it too much because it's just going to go on the barbecue. We want to get that smoky taste it's going to get. We don't want it too dried out.

A nice bit of curry under there. A nice bit of lime there. So, we've got our citrus to break down.

It partly cures the fish as well so it starts to get the cooking process going as well. It's all really good. The oil is adding the moisture and our spices, they will all start to break down that protein from the fish as well so really, really good.

All is good. A nice bit of salt and pepper. Break that free.

Just going to salt that. A nice bit of olive oil. You can use sesame oil.

You can use grape seed oil. It's entirely up to you. I like to use a nice bit of olive oil.

So again, salt and pepper, soy sauce, I'm going to add some nazigorian, some Indonesian spice, very, very nice. Quite chili, quite hot, again, that gets it going. Some of this, some of that.

A little spoon of that. All that is powerful. So, I'll just get my hands in there now.

Give it a nice, little mix around. Like I said, not for too long. Don't want to, sort of, destroy our fish.

Now, it will sit in the fridge for less than 15 minutes. Then we will have a nice marinade flavored piece of salmon. I could barbecue that.

I could put it through the oven. I could pan roast it. I could wrap it in paper.

I can do it in tin foil. I can steam it. All the flavor is there so it's done.

I could even microwave it. With a plate and salt, a little bit of water. 15 minutes, done.

Leave it in the fridge, game over. Easy. And that's how I marinade my salmon. .
