How To Open And Clean Scallops

Scallops are delectable, tender pieces of shellfish which are best when fresh from the sea. This film will show you how to open and clean scallops for later use.

Serves:

Step 1: You will need:

  • 1 scallop, in shell
  • 1 oyster knife
  • 1 tea towel
  • 1 tray
  • 1 spoon
  • 2 bowls, one with cold water

Step 2: Open the shell

Grasp the scallop shell with the tea towel. Insert the knife at the front of the scallop, trying to scrape it along the top of the shell. Turn the shell as you move the knife, keeping the blade against the top of the shell. Remove the top shell, being very careful not to damage the meat.

Step 3: Remove the scallop

Use the spoon to scrape the scallop from the shell. Holding the scallop in your hands, gently tear off the membrane "skirt" from the meat. Place the actual scallop into the bowl of cold water to wash away any grit.

Step 4: Remove the muscle

Take the scallop out of the water. On the side of the scallop is a small muscle that needs to be removed. So, cut it off with a knife and discard it. Place the scallop onto a clean tea towel and use as needed.
