- olive oil
- salt
- pepper
Method
Melt some butter in a preheated pan. To stop the butter from burning, add a small amount of olive oil. Once the butter has melted, turn the heat down slightly.
To prepare the steak, lay it between two sheets of clingfilm and hammer to thin the meat slightly.
Add the steak to the pan, laying it away from you so that if there is any splash back, it won't go in your face. For a rare steak, cook for around a minute and a half on each side. Let the steak rest for another minute and a half before serving.
As a 'rule of hand' for cooking steaks, touch the base of each finger with your thumb and feel the texture of your hand below the thumb. This is the texture your steak will be after that length of cooking time: one is raw, two is medium-rare, three is medium, and four is well done.
