How To Pickle Jalapenos
In this step by step guide chef Matt Kemp from the Underground cookery school shows you how to prepare pickled jalapenos chili peppers. Serve with tapas or with Mexican food.

Ingredients
- white vinegar
- sugar
- green chilies
Step 1: Sterilize The Pickling Jar
Put the jar into boiling water for about 15 minutes before starting on anything to make sure the jar is sterilized sufficiently before being used.
Step 2: Making The Pickled Vinegar
Put a sufficient amount of white vinegar into a metal pourer, and then add a generous amount of sugar into the white vinegar, and stir until the sugar is sufficiently dissolved within the white vinegar.
Step 3: Preparing The Jalapenos
Stuff the smallest green chilies into a glass jar first, and then add the larger chilies onto the top, cramming and condensing all of the chilies into the jar.
Step 4: Add The Liquid
After giving the liquid one final stir, pour it into the jar, completely covering the chilies. Finally, seal up the jar very firmly to preserve the freshness of the pickled jalapenos.
