How To Poach Chicken

In this easy to follow recipe Chef Kemp from the Underground cookery School shows you how to make a tasty and healthy dish of chicken poached in stock. Serve with potatoes and spring greens.

Ingredients

  • Stock
  • Bay leaf
  • 2 Peppercorns
  • 4 Chicken Thighs

Step 1: Add Stock

Put the chicken thighs in the bottom of a saucepan. Pour stock or water to cover them, then add a bay leaf and a couple of peppercorns.

Step 2: Boil And Simmer

Bring to the boil with the lid on, then reduce the temperature and simmer for about 12 to 15 minutes. Remove the chicken and leave to rest on a plate for a few minutes.

Step 3: Reduce Sauce

Remove the bay leaf and peppercorns from the liquid remaining in the saucepan, then simmer on the hob until it thickens into a sauce. Pour over the chicken and serve.
