How To Prepare A Japanese Seaweed Salad
In this step by step guide chef Karen Bretts shows you how to make a Japanese inspired salad using seaweed and cucumber with a tasty sesame dressing. serve with fish or meat and some steamed rice.
Ingredients
- 120 ml rice wine vinegar
- 150 ml dashi/fish stock
- 2 tbsp sugar
- 1 cucumber
- 25 g dried wakame seaweed
- 2 tbsp soy sauce
Step 1: Make The Dressing
Add 120ml rice wine vinegar, 150ml dashi, 2 tbsp soy sauce and 2 tbsp sugar to a sauce-pan. Warm on the hob for 10 minutes or until the sugar has dissolved.
Step 2: Prepare The Cucumber
In the meantime, prepare the cucumber. Cut the cucumber in half length-ways, remove the seeds from the center. Then slice the cucumber finely.
Step 3: Prepare The Seaweed
Add 25g dried wakame seaweed to a separate bowl. Add some warm water to allow the seaweed to swell up.
Step 4: Combine The Elements
Place the seaweed in a bowl, add the sliced cucumber, pour over the dressing. Mix well and then spoon into a serving dish.
