Eating clams in the summer or winter season is a lot of fun. You can have a soup based on clams together with crusty bread and then you can enjoy your meal.
Hi there. I'm Matt from the Underground Cookery School and today I'm going to do video cookery lesson for you. Well, I'm going to show you how to cook clams today.
Very simple. I'm going to get that on the go as quickly as I can. Bit of olive oil into the pan.
I've got these beautiful clams here. Just run them under a cold tap. If any of them are open, just give them a little tap and if they close up, you know that they're ready.
I've got some garlic which is already chopped up so that can go in. Give that a little bit of a mix. Don't leave it in there too long.
Now, I'm going to add my clams, in they go. I'm going to add a few drops of red. white wine rather, a bit more in there. Little bit of parsley, not all of it, because we'll use a bit for garnish.
Stick the lid on and that's practically it. We're going to wait for the wine to come up to the boil. What will then happen is, that will steam the clams and then we're done and the little white wine that we put in there, will then turn into a clam stock and then we'll plate up on this dish and you will have beautiful clams in less than two minutes.
Cooking time is about two minutes in here. Well, those have been cooking off for literally two minutes. Just as I said, all that steam comes off and that's it, done.
Just going to take these out of there, beautifully cooked. And here's the best bit about this dish, you've got all that lovely soup. So, it's a bit more like marinated dish but I think, served with warm crusty bread, this is absolutely delicious meal whether it's in the middle of summer or in the bleak mid-winter.
