Paul Ellis shows a quick and easy way to roast almonds on the stove or in the oven that can be done with a couple of simple ingredients in just a few minutes.
I'm going to show you how to do roasted almonds. I've got some blanched almonds here and what I'm going to do now is have a pan on top. What I'm going to do is actually get them sealed off and get some colour going through them because I don't really want my almonds to be too dry in the oven.
So, pan on top. Just get them going in the pan there. So what I'm going to do, I mean, I can add some spices to it, I can make it spicier by adding chili and that sort of stuff, but I'm going to keep it plain.
Just a little bit of olive oil to it. Just add a bit of moisture back into the almonds. So really, what I'm doing here, I'm just pan roasting, then I'm going to put them through the oven again.
So, I'm just really nurturing the almonds a bit, giving them a nice bit of coat. They can, like I said, they can go through the oven. But they'll be really dry and like I said, I like to add a bit of moisture and so let me add a bit.
Depending upon what they're for, I mean, obviously if it's for a savory, then just put your salt and pepper on or savory stuff. But if they are for dessert, then there's no harm in putting a bit of sugar for them. So, they are starting the colouring process now.
So, just got them going there, got a nice colour for them, just turn that off now. Add a bit more salt and pepper to it. In some kitchens, you can actually get away with just pan roasting it, but you know, some of the chefs like to get them on top and then put them through the oven as well.
Now, I'm just going to put my almonds through the oven now. I've got them in the oven at about 180, they'll be in the oven for about maybe 5 to 8 minutes and that's it, then I'll take them out. They're in the oven now for 5 to 8 minutes.
I set the temperature roughly about 180, 200 guess mark between 5 and 6. So we'll come back to that and see how they look. So coming back to my almonds, they've been in for just over 5 minutes, nice and toasted, and they're ready for use.
I'm just going to use my hands, they're going to go straight onto the plate, nice and toasted. They've got some moisture to them as well. And that's how I roast my almonds. .
