How To Select Seafood

Selecting squid

When selecting a clean squid, it should be firm fleshed and have a bright, clear, off-white meat. If they are not already cleaned, they should have a speckled, purplish colour and not be torn. Their tentacles should be stiff and intact and never broken and limp.

Selecting clams

When buying molluscs, remember that their shells should be tightly closed. Discard any clams that have cracks in their shells or if they look dry, as they are dead and therefore inedible.

Selecting prawns

Fresh prawns should have a shiny, firm shell that is tightly attached to its body. They should not be soft or strong in smell. Be especially aware of black spots on and under the surface of the shell, or when the head is nearly falling off. This is a sign that they are past their peak!

Selecting mussels and oysters

There are many types of mussels and all have different colouring. When buying them they must be closed. Immediately discard any that are cracked and open! Choose oysters with tightly closed, curved shells. They should also be displayed in the shop with their curved side up. This will keep their tasty juices inside the shell. All molluscs should be kept on ice or at least in a refrigerated case.
