How To Serve Smoked Salmon

Hi there, I'm Matt from the Underground Cookery School, and today, I'm going to do a video cookery lesson for you. Hello. I am going to show you how to serve smoked salmon properly.

Now, I've laid my salmon out on a board, and I'm just going to cut a circle using a very sharp knife, all the way around because I want to have a perfect circle on the plate. We just lift that up, and what I can now do is transfer that perfect circle onto the plate. That will take me a minute or two, so you can go amuse yourself by pouring yourself a large brandy whilst I do that.

Come back in a sec. So, we've now got a reasonably circular presentation of salmon. I think, what this dish needs, are three things.

You want some capers, you want some diced onion, down the middle like that, and you also want a dash of lemon. Never squeeze the lemon on directly because it will cook it. A little bit of black pepper on the salmon itself and we're just going to - we need to give this dish a bit of height.

So, I think the best way of doing that is just dressing some salad and placing it on top. So, here's a nice bunch and I think that makes such a big difference now from just serving, you know, a very flat smoked salmon. What you now have is something really worthy of the dish itself.
