Step 1: Don't buy pre-packaged

Get ice-packed, sushi-grade, fresh fish from a fishmongers

Step 2: Scales

Make sure the scales are nice and shiny

Step 3: Colour

Make sure it's a nice colour – remember that organic salmon will be a slightly lighter shade.If it has a head, make sure it has bright eyes and red gills.

Step 4: Flesh

Make sure the flesh is soft and smooth

Step 5: Instincts

Trust your instincts. Does it look and smell fresh?
