Today, I'm going to show you how to peel and store root ginger. It's one of the things I get asked most in my classes, and actually, once you're shown how to do it, it's really simple. I'm going to start off with a regular piece of ginger, and the secret weapon is a teaspoon.

All we do is literally scrape the ginger with the teaspoon. It takes away all the fiddly bits with knives and scraping things off, and cutting bits of your fingers off. So, all I am doing is taking a teaspoon and scraping the skin off the ginger.

Really simple! Once that's done, we just clean up the edges. And the way I like to store it is in a plastic tub in the fridge. Keeps forever.

We are just going to chop this up quite finely into little cubes. Once that's done, into my plastic tub, lid on, and that will keep for two weeks. If you are ready for a recipe, it can go straight from the fridge into your recipe, or even better, you can store it in a plastic tub into the freezer, and it goes straight into the wok or into a dish just fine.
