How To Store Wine

Temperature

The most important consideration when storing wine is temperature. Wine cellars are usually located underground because the temperature there is cool and fairly constant. For long term wine storage, you should aim to keep the temperature at around 10-13 deg Celsius, although several degrees either side is fine as long as there aren't many sudden fluctuations in temperature. Gradual fluctuations, such as between summer and winter, will not cause a problem. Before serving wine, chill white wines in a fridge, and let reds adjust to normal room temperature.

Light

The taste and quality of wine is also affected by light, and this is why many wines are sold in dark coloured bottles. However, bottles of wines stored in the long term should still be exposed to as little light as possible. This is why wine cellars are usually kept dark. And remember to never store wine in direct sunlight - even a short period of exposure will affect it.

Humidity

Although humidity is much more difficult to control, a proper wine cellar should also be kept fairly humid. This will help keep the cork in good condition, and prevent it from drying out. Bottles should also be lain down horizontally so the wine remains in contact with the cork.

Calm

Wine needs a calm environment to properly mature and develop. Think of wine as a living thing that likes to sleep. Don't store it in a place with excessive vibration from machinery or traffic. Once the wine has been lain down, try not to move it around too much.

Cleanliness

Although a layer of dust on the wine bottles may give your cellar a charming, rustic look, there's no practical need for it. A wine storage area should ideally be kept clean and well-ventilated. And avoid storing wine with foods that can ferment.
