Hi. Welcome to Godfrey's, one of Britain's best butcher shops. Today I'm going to give you a small insight into little tips about meat, that might make things a little bit clearer for you at home and might be a help to you.

How to stuff a chicken or to get the best out of a chicken? A chicken probably feeds about 4 or 5 people, but to make that chicken even more special you can stuff it. The way to do it is put your finger up the breast part. Loosen the skin off, like that.

There's a very simple way to do it, very simple bread stuffing, which is basically bread, and things like herbs and sun-dried tomatoes, onions and garlic and things like that. That's going to be your normal stuffing. This one here is your sausage meat.

What you do is get any sausages, take them out of their skins, and use that as the first stuffing that goes into the breast. Because all the juices from the sausage meat all go down onto the bread stuffing, which is what you call your fork mix stuffing. You can get a lot of stuffing, you can make a chicken go a very long way doing it like this.

And it's simply delicious, the stuffed chicken is much better. What you do, mould it like that, round there like that. Then you season the chicken, put it in the oven, and that's how you stuff a chicken.
