Hi, welcome to Godfrey's, one of Britain's best butcher shops. Today I'm going to give you a small insight and tips about meat that might make things a little bit clearer for you at home and might be of help to you. How to tell if beef is fresh? Well, beef in theory shouldn't be fresh, it should be hung.
But if it's overhung or if it's been cut too long and been left in the pack, it's going to be very very slimy and wet and it's going to smell of like nuts, have a nutty smell to it, which is not great. You can eat beef that is old, because it's not the same as chicken, but the problem with it is the flavor. You're going to get like a real strong nutty flavor through the beef if it's overhung.
That's rightly hung; that one's only four weeks. And that one, there's a fresh one. That one's about well, a week and a half or two weeks.
They'll both be great, but that one will be better, but it's older. It doesn't mean it's soft because it's older. But if you get meat that's very dry because it's been left out too long, then it becomes very dry and very unappetizing and the flavor is not great.
So if it's very dry and it's not looking good, don't eat it.
