Hi, welcome to Godfrey's. One of Britain's best butcher shops. Today I'm going to give you a little insight into little tips about meat that might make things a little bit clearer for you at home and might be a help to you.

How to decide if lamb is good quality? Depending on the time of the year that you're buying lamb, in April time you're looking for spring lamb. So on spring lamb you're looking for nice, light colored flesh and you're looking for nice buttercup yellow fat, and that's all over the spring lamb. As that lamb gets older you get the eye of the meat, or the flesh gets darker.

This doesn't mean it's bad, towards Christmas time lamb is always a little bit darker. And if you're looking for mutton, the main thing you're looking for is you're not looking for too much fat, you're looking for just a nice covering of fat around the meat to serve for cooking. That's how you tell good lamb.
