Hi, welcome to Godfrey's. I am Chris Godfrey and today I am going to be showing you a few of my tips about meat. I have been running this shop for the last thirty years and it has been in my family for over a hundred years.

How to tenderise meat? Well, if meat is actually tough and you put your fingers into it and you squeeze it and it wont go through, it is probably beyond tenderising. Well, there are a few things that you can do to make it a bit tender. If it's very tough, if you have got a very sharp pointed knife, you can do this.

It breaks down the fibers within the meat. Once you have done that you can marinate it. But you have to remember, once you do this to the meat, once you've put a lot of little holes into the meat like that and broken down the fibers, it cooks a lot quicker and it cooks in half the time.

So if it is for the steak or something of that eating array, you want to cut the cooking time down and keep an eye on it. So, once you have got your piece of meat and you have put little holes in it and you have broken down the fibers, and you want to tenderise it more, or you have not put little holes in it and you want to make it a bit more tender. It is for a barbecue, I think, so you need to marinate it for tenderising.

You need a bit of wine. Remember, wine is parched in flavour, so you don't want overdo it. You want oil and you want lemon juice, because it is an acid.

And the acid will help break down the meat. So you want to squeeze it out. That is just the basic tenderising marinade.

And after that, you can add natures natural flavour houses which is herbs. And just put your meat into it and leave it there. You can leave it in room temparature for a few hours if you want to hurry the process up, or you can leave it in the fridge overnight.

But the thing is, we have got wine with it, it will get the wine flavour, it will be quite strong on flavour. If you want to marinate to put flavour in something, then put the wine in and just put the vinegar or use the lemon juice or the olive oil. That is it. .
