Chris Godfrey demonstrates how to tenderize certain types of meats. Godfrey shows which meats do not need tenderizing and gives tips on how to avoid tough meat. Chris also demonstrates a technique he uses on tough meat to soften it up using a meat mallet.
Hi. Welcome to Godfrey's. I'm Chris Godfrey and today I'm going to be showing you a few of my tips about meat.
I've been running this shop in Highbury for the last thirty years and it's been in my family for over a hundred years. How to tenderize steak? Well that's not a very good question really because when you buy a piece of steak it should be tender anyway. If you hang beef properly it definitely won't need tenderizing.
Those are sirloins and this nice piece of rump, those won't need tenderizing. But if you tap on a tough piece and you put your finger through and you know it's not going to eat great, you can redeem it a little bit by bashing it between a bag with a basher or a meat mallet. Or just use a meat mallet.
You can just bash it out a little bit. I wouldn't go too mad. Steak should never be tough if you've got the right cut.
