Hello! I'm going to show you how to tenderize steak which is actually very simple. I've got two implements form which to do it, three actually if you include the cling film. But the first thing you should do is just wrap the steak in cling film, and that just protects it, and if you don't have one of these, this is a mallet which you use specifically for that job.
You can just lightly just give it a good old hammering and that'll do the job quite nicely. Now, not everyone has a steak mallet at home so you can just use the tinfoil, you get a similar sort of result. Just give it a good old bang and that actually tenderizes it nice and beautifully.
Now obviously, the same rules apply if you're doing chicken or veal, or anything else for that matter, just give it a good old tap. I also find particularly with very large steaks, if you want to cook them nice and quickly, tenderize them first, and then you can cook them off on a griddle pan I've got one here, just as an example. If you do use a griddle pan, my advice is put it on the holt as I've done here and put the gas up to as high as it will go and leave it there for at least 6 or 7 minutes before cooking, and try not use any fat, there's plenty of fat in this steak.
But, you know, having said that, if you put fat on either the meat or on the griddle pan, it's simply going to burn and go straight up into the extractor.
