I'm going to show you how to roast pine nuts. Now, there are two ways to do this, either on a flat tray, a small bit of olive oil, salt and pepper, throw it in the oven. Another way of doing it, and so a hot pan, small bit of olive oil, so what we're doing here, we're actually pan roasting the pine nuts, and if you were to make pesto, it just makes it a bit more sweeter, takes the edge off the nuts.

You can't walk away from this. You've got to be literally moving around the pan the whole time. I normally add a bit of black pepper and some salt.

Very, very little olive oil to this, because pine nuts have got their own oil as well. So, what you see now, they start to colour. You have to keep them on the move now, the pan is nice and hot now so you don't want to burn them, keeping it moving all the time, moving it around.

Nice and hot in the pan. Very important, don't burn them, once they've burned, you can't use them, they give up every bit of taste. So you just want to keep it nice and golden brown, there's enough oil now to keep them browning up and just keep the pan moving all the time.

Very important now as you take it off, you start to see it browning more and more and it doesn't take long. It's very important, you can't walk away from it. You've got to keep it going around the whole time, very important.

This is a pan roasted version, you wet-nurse it and you know it's going to be nice and golden, you know it's going to come out well because you're looking at it the whole time. And that's what we get, that nice colour from them, a nice golden olive oil and pine nuts. And that's how I roast my pine nuts. .
