How To Turn Barley

Step 1: Tools for malting barley.
Well, here at Bowmore we have our own traditional floor malting, where we malt the barley ourselves. This is the shill, or the malt shovel. It's made of wood, of course, so it won't damage the grain, and this is the shovel we use to turn over, spread the grain through the air, release the heat, keeps it nice and loose. This is basically the tool for turning the malt in the traditional way. We also pull the plow or the grabber through it, and this allows the air to get in it, keeps the temperature down.
Step 2: Malting the barley.
What we do is scrape it up off the floor and spray it through the air, step back and clean the floor behind you, step forward, lift it up, spray it, release the heat, and step back and clean the floor behind you as you move forward, keeping it nice and smooth where you lay it. Spray it out nice and dense, level.
Step 3: How to turn barley.
When I come to the end I wait for the guys to reach it, then we turn and go back using our left hand. You have to turn it both ways, because you go one way and then you turn and come back the other way, but at the same time, trying to throw it the same way.
