Meat Feast Soup With Couscous

This beef soup dish is really a wholesome meal in a bowl and will serve six people. It's nice and quick to prepare, and can sit simmering for 40 minutes or so.

Step 1: You will need

  • 380 g Quality Standard Beef Mince
  • 1 small onion, peeled and grated
  • 1 large garlic clove, peeled and crushed
  • 2 tbsp freshly chopped mint or parsley
  • 2 tbsp olive oil
  • 400 g chopped tomatoes (can)
  • 850 ml good, hot vegetable stock
  • 180 g savoy or green cabbage, finely shredded
  • 50 g dried plain couscous
  • 50 g freshly grated Parmesan cheese, optional

Step 2: Prepare the meatballs

Put the mince, onion, garlic, herbs and seasoning in a large bowl. Mix together and shape into twenty to twenty-four 2.5cm (1inch) balls.

Step 3: Seal the meat

Heat the oil in a large saucepan and fry the meatballs for 4-6 minutes until brown. If you are watching the calories you can dry fry your mince. Make sure your pan is really hot though and don't overfill your pan as you'll stew the meatballs. Spoon off any excess fat.

Step 4: Cook

Add the chopped tomatoes and stock. Reduce the heat, cover and simmer for 20-25 minutes. When that's bubbling away nicely, add the cabbage and couscous. Simmer for a further 5 minutes.

Step 5: Serve

Ladle the soup into bowls, garnish with grated cheese, and serve immediately.
