Step 1: Peaches
Hi there, I'm going to show you how to make a Peach Cobbler. There are lots of people out there that want to know how to make it.
I've got some lovely peaches and what we need to do is just get them going, so I'm just going to cut them in half like that and you can take out the stone, which sometimes can be quite tricky.
These are nice and ripe. And I'm just going to lay them in the pan like that. Maybe one more.
Squeeze it in. There we go. I'm going to cover it with just a little bit of water, really all I want to do is just make these lovely and soft.
So I'm just going to poach them for a second so that goes straight on the hull.
Step 2: Batter
Right, so the next thing we are going to do is make the batter. So I've got my food processor here, and I'm just going to add lots of ingredients.
Now, the first is, I've got the flour here. So that will go in and some cinnamon powder, and the first thing I'm going to do is just give that a quick pulse, just to combine those ingredients. That will do.
I think cinnamon is a mulled about thing, you either love it or hate it. I absolutely love it. The next thing we are going to add is butter.
And I've just diced this up, so that goes straight on. And what we are effectively doing at this stage is making it crumble so again, I'm just going to give that a little blitz. There we are.
Now, the idea is really just to get a nice sort of breadcrumb style consistency to it which we now have. In order to create a cobbler effect, you need to make a batter so we need to add the moisture to it. Now, the first thing I'm going to add, through the hole, is an egg.
I'm also going to add a little bit of sugar. And, as you can see, the mixture is actually still quite pasty which is why I think it's a good idea to add the milk at this point. When you have to give it texture, you don't have to add all the ingredients, just add the ones you think you will need.
Well actually, I'm going to add pretty much what I had hoped but that's really the mixture you are looking for. Now, what's going to happen is this, in about 2 or 3 minutes time, those peaches are going to be ready. We are going to come back and we are going to lay them into this dish and then we are going to pour the batter on top, so when you come back we will do all of that.
Step 3: Lay Out Batter and Peaches
Step 3: Lay Out Batter and Peaches
Well, what I have done is I've already taken out most of the peaches but I did want to just show you how easy it was to take the skins off. And I think it makes a huge difference with the eventual results, it's definitely worth doing that. Just a little bit of attention to detail.
And as you can see, I've laid them out nice and neatly. I've got this fantastic batter here, with a lovely cinnamon flavor to it and all I'm going to do is just add bits of that around the cobbler. When I first started cooking, I used to run around buying the exact tin it said in the recipe, but it's just not necessary.
So what I've done there is I've pretty much covered the ingredients. And just as a finishing touch, I'm just going to sprinkle some walnuts which are roughly chopped up on top. And just for extra effect, I mean, you don't have to do this but I'm just going to add a but of golden coasted sugar on top.
Step 4: Bake
There we go. That goes in the oven I would say, I mean, my oven it's going to be 150 degrees. It does vary, but 150 degrees is a good temperature to cook at.
In there, about 20 to 25 minutes, so we will come back in a minute. When you take the cobbler out, what you should really be looking for is a nice crust on top which we've got here and this just looks fantastic. Oh, why haven't I been making peach cobbler more? There you have it, the most beautiful peach cobbler, that's how you do it.
