This dish is called Quorn Chilli Jackets. Very easy to knock out and makes a great meal for the whole family. First stage, I’m going to use some low fat cooking spray which goes into a medium hot pan and then, we’re going to add our onions over there. Give that a quick stir. We want this to brown just slightly. We’re also going to add our chilli, and also we’ve got some garlic, chopped green and red peppers, and this will all be cooked down for about three to four minutes. Okay, everything’s cooked down now. It’s really nice and starting to caramelize. At this stage, we add our stock. A quarter to a pint of stock going in, just give that a quick stir and that’s going to be left to cook for around two minutes. Now, we’ve got the rest of our ingredients. We’ve got our Quorn Mince. These are really great because you don’t have to pre-fry before dropping it into your pan. So make that quick and easy. Next, we’re adding our tomatoes. We’re adding some tomato puree, some mushrooms, and some sweet corn. And we’ll just get it cooked down. One of the great things about Quorn Mince is that it doesn’t shrink while it’s cooking so you get a better value for your money. Well, that’s ready to go. Cover it a little, and that’s going to be out after ten minutes. Have a look, and look at that, it’s absolutely amazing. Let’s give it a quick stir, and now the next stage, we’re going to add our kidney beans. Just get those stirred into the mixture, let’s get those incorporated there, stick the lid back on, just let that simmer for another five minutes, and then we’re ready to go. Let’s have a quick look at this, look at that, it’s done. Let’s give it a quick stir. It smells amazing. We have some lovely jacket potatoes here. Alternatively, you can serve it with a bit of rice, some sour cream, some guacamole and a little grated cheese, and there you go. Done. A little taste of Mexico in your living room.
