Cottage pie is a wholesome British dish, loved by the whole family, and it’s so simple to do. What I’ve got in this pan is some potatoes and parsnip, which I’ve just boiled down, and that’s going to be ready for the topping, which I’m going to make later on. In this pan, we’re going to make the filling. I’ve got a couple of tablespoons of oil. To that, I’m going to add a finely diced onion, and some finely diced carrot. And that’s going to be cooked down for a couple of minutes, just to soften. The carrot and the onion has softened down sufficiently now. I’m going to add the rest of my ingredients. I’m using Quorn Mince. It’s a great alternative to meat, because it’s high in protein, low in fat, and no need to pre-fry it before. You can add it straight to the pan along with some frozen peas, some Worcestershire sauce, some light soy sauce, and some tomato puree. And that’s going to get stirred together. I’m just going to add some stock. And also in with this, I love a nice grinding of black pepper. I’ve got some corn flour. It’s just been mixed with a little bit of water, and this is going to thicken everything up. That just goes in. All you need to do now, just as the heat’s on, is keep stirring, and that’ll gradually thicken everything up. This has been simmering for a couple of minutes now. In the meantime, I’m going to make my mash. I’m going to add some milk, and also a really nice grinding of black pepper. Just mash that down into a nice, smooth consistency. The filling for the dish is all reduced down, and gotten really nice and thick. Just get that into our pan. Okay, and now we’re going to add our topping. Just spread it out gently on the top. I don’t want to disturb the filling too much. Now, what I’m going to do is I’m going to use a fork, just to go over the top, and all these little bits will caramelize when it’s in the oven. Okay, now that’s finished, it gets transferred to a preheated oven until the top’s burnt. Wow! Look at that. There you go. Lovely! Serve that with some steamed fresh vegetables, and that’s great for the whole family.
