Quorn Spanish Style Casserole

Step 1: You will need

  • 2 tbsp Olive Oil
  • 1 pack Quorn Sausages, cut into diagonal pieces
  • 2 Onions, finely chopped
  • 2 Garlic Cloves, crushed
  • 1 Red Pepper, deseeded and diced
  • 1 Green Pepper, deseeded and diced
  • 100 g Sweetcorn
  • 1/2 tbsp Smoked Paprika
  • 2 tsp Mild Chilli Powder
  • 100 ml Sherry or Apple Juice
  • 400 g Chopped Tomatoes
  • 400 g can of Cannellini Beans or Broad Beans
  • 150 ml Vegetable Stock
  • Salt
  • Freshly Ground Black Pepper
  • 1 bunch Flat Leaf Parsley, finely chopped

Today, we’re cooking a hearty Spanish casserole using Quorn sausages which are absolutely great. Our Quorn sausages, you can get them both in the freezer cabinet and in the chiller, and you can cook them directly from being frozen. Okay, to a medium hot pan, we’re just going to add a little bit of oil which is going to help us to brown our Quorn sausages. Get them into the pan. It would just take a couple of minutes to really cook off and get a nice color on them. And then we can add the rest of our ingredients. The Quorn sausages are great because they are lower in fat than many meat sausages, that is why they’re absolutely ideal for this dish. Okay, we’ve reached a stage now where our sausages have got a beautiful color on them and now, we’re going to add our next ingredients. We’ve got a couple of onions just sliced down thinly. We’ve got some minced peppers, and a clove of garlic. And this is the important part, I want to cook this nice and gently, you want the onions to really go nice and sweet. It’s just really going to add some depth. And that’s going to take around 3 to 4 minutes. The onions have cooked down beautifully; we’re going to add our next ingredients. We’ve got some chilli powder, and we’ve got some paprika which adds to the amazing color. We’re just going to cook that down very quickly, just to flare up the spices and encourage the flavours to come together. And now we’re just going to add some apple juice. Alternatively, you can use a nice sherry. Okay, that’s been cooking for 1 to 2 minutes now, you can really smell the smokiness of the paprika coming through. We’re just going to add the rest of my ingredients. We’ve got some sweet corn, we’ve got tinned tomatoes, and we’ve got some lovely cannellini beans which are going to add a really nice body to the dish, and then we top that with a little bit of stock. You can see the colors in there are absolutely amazing. Love that one cooking, it couldn’t be any easier. We’ll just bring that to a simmer, stick a little, bubble that away for ten minutes, lovely! Okay, this should be ready now. Wow, look at that. Little bit of black pepper, just give that a quick stir and we’re ready to go. I love to serve this up with some really nice fresh crusty bread and some freshly chopped parsley. Look at this color. Spanish casserole, a hearty dish for all seasons.
