Ingredients
- 1/2 cups (120ml) leeks, diced
- 1/2 cups (120ml) carrots, diced
- 1 cups (250ml) basmati rice, cooked
- 1/4 cups (60ml) peas, cooked
- 1 egg
- olive oil
- 1 tsp soy sauce
- salt
- pepper
Method
Heat a little oil in a frying pan and add the diced carrot and leek. After about 30 seconds add the rice. Mix well.
After another 30 seconds add the egg. Mix around to break up the egg and spread in evenly through the rice.
After another 30 seconds add the soy sauce and peas. Mix well and serve.
