Spicy Lamb And Feta Burgers

Step : You will need
- 450 g lean lamb mince
- 1 medium garlic clove, peeled and chopped
- ¼ tsp ground paprika
- 1 tsp ground allspice
- ½ tsp cumin powder
- 4 tbsp fresh parsley or coriander, chopped
- ¼ tsp sweet paprika
- 1 medium lemon zest
- 120 g Feta cheese, roughly crumbled
- ¼ medium cucumber
- 2 medium plum tomatoes
- 1 medium red onion
- 50 g black olives
- 3 tbsp fresh parsley
- 2 ½ tbsp olive oil
- 2 tsp lemon juice
Step 1: Mix the burger ingredients
Mix the lamb mince, chopped garlic, paprika, allspice, cumin, herbs, lemon zest and Feta in a large bowl. Season with salt and pepper.
Step 2: Shape the burgers
Wet your hands slightly, and shape the mixture into 4 x 9cm (3½inch) burgers. Hygiene is really important when handling raw meat, so wash your hands thoroughly before and after preparing the burgers. Cover in cling film and chill in the fridge on the bottom shelf for 20 minutes away from any cooked meat.. Chilling ensures that the burgers will be nice and firm so they hold their shape during cooking.
Step 3: Mix the cucumber relish
Meanwhile mix the cucumber relish ingredients together in a bowl and set to one side. You can make the relish in advance and store in the fridge until required.
Step 4: Cook the burgers
Heat under a preheated moderate grill until thoroughly cooked and any meat juices run clear. They could also be barbecued, or cooked on a griddle pan.
It is important to make sure that your burgers are thoroughly cooked through with no pink bits in the middle, you can tell it is cooked when the juices run clear.
Step 5: Serve
Serve in burger buns of your choice with salad leaves and the cucumber relish.
