Step : You will need

  • 50 g butter or beef dripping
  • 900 g lean chuck or rump steak, trimmed and cut into 2.5cm cubes
  • 350 g ox kidney, trimmed and cut into 2.5cm cubes
  • 680 g lean beef mince, ideally coarsely minced
  • 1 large onion, peeled and grated
  • 3 tbsp freshly chopped oregano
  • 1 tbsp freshly chopped mint
  • 6 medium sun-dried tomatos in oil, drained and finely chopped (reserving the oil)
  • 450 g red onions, peeled and finely sliced
  • 4 tbsp good balsamic vinegar
  • 6 medium bread rolls

Step 1: Prepare the burgers

In a large bowl mix all the burger ingredients together. Using damp hands shape the mixture into six 9cm (3½inch) evenly-sized burgers. Hygiene is really important when handling raw meat, so wash your hands thoroughly before and after preparing the burgers. Place the burgers on a large foil-lined plate or tray, cover and chill in the fridge for 20-30 minutes on the bottom shelf away from any cooked meat. Chilling ensures that the burgers will be nice and firm so they hold their shape during cooking.
If you like you can make them well in advance and store in the fridge until required.

Step 2: Prepare the Balsamic-glazed Onions

Meanwhile, prepare the balsamic glazed onions; heat the reserved oil in a large non-stick pan either on a prepared barbecue or hob. Add the onions and cook for 8-10 minutes until soft and caramelised. Add the balsamic vinegar and season. Cook uncovered for a further 10 minutes.

Step 3: Cook the burgers

Cook the burgers on a preheated grill or barbecue for 8-12 minutes, turning occasionally until cooked and any meat juices run clear. It is important to make sure that your burgers are thoroughly cooked through with no pink bits in the middle

Step 4: Serve

Serve the burgers with rolls of your choice, salad leaves, the onions and a selection of prepared relishes.

    what is that grill he is using for the burgers, is it just a type of pan?

    I add a tablespoon of dark brown sugar to the onion mix and a tablespoon of garlic puree to the meat mixture but otherwise this recipe is easy to do, tastes great and my small son loves it making the burger patties.
