Which herbs, spices should i use and the quantity please. IE teaspoon, desertspoon as this is where i seem to get it wrong not knowing the right amount of each to use!

i like Jamican stew peas. That's eaay to cook . i am vegan so this is also good for vegetarians and can be cooked without meat. Traditionally it is cooked with the stew part of beef and usuully salted or fresh beef with salted pig's tail but on a visit to Miami some years ago I found out that smoked turkey wings or parts were just as great. Now I no longer eat meat. In the traditional way the beef is usually cut in small pieces and boiled with red peas( kidney beans). Chicken can also be used. It is a softer meat and takes a shorter time to cook. what ever your choice you need to cook the peas first althoug with the beef you need to cook both together. some people like to add cocunot milk but thi sis optional. Almost a neccsity for the vegatarian version. Once peas and meat ar ecooked you can add weiners and or carrots. weiners are little wiggle dumplings( length wise not round ones) As soon as all ingredients are cooked or nearly cooked add sesoning- escallion , a whole pepper just for the flavour - do not cut or allow to burst so use a green one. the make a paste with flour and add stirring to prevent lumps. Allow to simmer over a slow heat until done. It is great. Cocunot milk gives it a pleasant taste. ( It is like red peas soup but without the food,dumpling sweet potatoe pumpkin etc) Thi sis usually served with white rice but creamed potato is just a s good
