Curry mutton is the best........ all you need is Five pound in money on mutton chops, turmic, all purpose seasoning and mild curry powder. Maraite in over nite,! Put into a pot with one onion and a couple of garlic cloves (curshed) and some tyme (dried is fine). Add water bring to the boil and simmer for as long as it take to sofen the meat i normally cook for a couple of hours on a very low heat near to the end add a couple of potatoes cut into smalll cubes, this is to help thicken the sauce.

Note curry chicken, and brown stew chicken can be ateten with rice and peas, plain white rice, banan and dumplings potatoes yam, or even nice french bread , roti etc.

Curry chicken is one of my favourite. Again you can cook serving sizes but in Jamaica it is more popular to have the chicken kind of chopped in mouth sized pieces. All parts but not big pieces. The point is to have the bony parts also. once you have prepared the chicken you season the same way i have just told you but then you need to have Jamaican curry powder. i hope i told you about using salt but sparingly . If you use soy sauce , it is uasulay salty. So taste the seasoning amd make sure it is to our taste.This time you don't want it to be sweet so leave out the sweetners. But you need what we call coutry pepper that is the real pepper scotch bonnet if you can get it. It is very hot so use only a small piece- especially if you have children. You only want the flavour. Once the chicken has beeen seasoned you can add the curry powder in two ways. I usually just add it as an additional ingredient to the seasoning. I pour a liitl oil on chicken and then rub on the curry but gourmet cooks add the curry powder to the heated oil. Once the oil is heated preferably in a dutch pot just pour in all seasoned chicken and allow to cook slowly until tender. A nice touch which I learned fairly recently is to add a dash of cinnamon to taste. It gives the curry a great flavour. Enjoy. Do the same for curry goat but it takes longer to cook and add more pepper but for children use sparingly. In jamaica goat is very bony but I suspect that if you cant get goat , you can use lamb. We like to use the ram because of its pungent smell.

forgot to tell you. A great way to season the chicken is to blend all the ingredients- i.e. pepper, eccallion, onion, thyme ginger and use to rub on chicken. Of course you can use drum sticks but in jamaica we tend to use all the parts of the whole chicken ( cut in serving pieces of course or simply choped in mouth sized pieces,and we call it brown stew chicken.

Stew chicken is very easy to cook. I am not agreat cook but basically you need to season the chicken overnight if you want to get a nice flavour. Season with , onion, scallion, salt, black pepper, scotch bonnet, basil ,pimento . You can add a little soy sauce if you want or a little browning Not much as this will cause the chicken to burn and it is bitter if you add too much.
For cooking , you need to make sure oil is heated, best to use a non stick pot or a dutch pot and brown or fry the chicken until it is brown but not over cooked without the ingrediets that you used to season chicken. Once it is fried leave a little bit of the oil in pot and then add the seasoning with water , worcester sauce or some other of your liking. Place the cooked chicken into this sauce. Do not use a lot of water. Over a slow heat, allow the chicken to simmer. for the sweet tatse you can make sauce with sugar, ketchup and alittle vinegar. you can aslo cooked the chicken in orrange use or evn use pinapple depending on your taste. Alternatively, you can just put seasoned chicken into dutch pot and cover tightly. over a very low heat allow chicken to cook in its own juices, slowly adding very small portions of water if it dries out or if you want more gravy or sauce as we say in jamaica. Once it is cooked you can spice up again by adding additional onions, tomatoes, sweet pepper just before cooking is done so you keep the flavours or if you like to eat the seasonings as I do.
