Oh yes. I complained and complained. I showed them copies of all of our online complaints. The next thing I knew, a coporate sponsor told me that they would supply the product again from August thru October and if sales are good, Sam's will keep it longer. I advise all of you to please check your local Sam's now. I purchased 10 and stored them in my freezer. I also pass a few on to others so they can fall in love with this dish as well. It will go great for the two parties I have coming up. Thank God and Thank you SAMS!!!

Hurrah, hurrah! Chicken & Pasta Con Queso is back at Sam's Club in the Baltimore, MD area. They were providing samples this past Friday evening, and the sample server said she had sold a lot of them that day. There were only 7 left before I snagged two from the freezer.

I hope the Sam's in Texas will stock it in their stores in August also, though I would love to get it before then. Now I drive 1 and 1/2 hours to Sam's one way so you can imagine how unhappy I have been not to find it .

Glad to know I am not the only one searching for the Overbrook Chicken con queso. I have seriously thought about cancelling my Sam's card since the casserole was my main item to buy there . I just do not understand why Sam's thought it was not a popular item since it sold so fast and I would have to buy several at a time to make sure I did not drive 30 miles to only found out they were sold out. Now explain how it was not a good seller. I will e-mail and e-mail on this to Sam's and to OverBrook because the casserole was too delicious to give up easily on.

Hello again. I wrote and wrote. FINALLY I received a reply from the SAMS Warehouse in Memphis. This manager says that I will see the Chicken Con Queso in August in the Warehouse!!!! I can' wait. I'm going to stock up my freezer with all I can afford! I am so thankful that someone heard me. Now, it was said that if sales do not increase, that they will discontinue the product. I'd prefer to see the Quesedillas disappear first. They're good but not as good as this casserole! O YESSSSSS! I am one happy camper. Just the perfect Birthday present. MORE Con Queso.....THANKS Sams and REQUEST FOODS ! I will forward my email reply to all that desire to read the response. Thanks again and again and ..........................~(INFINITE)

PLEASE write SAM's Warehouse and complain about them discontinuing this product. It is definitely the best I've ever tasted. It makes a grand party dish and buffet dish for at-work functions. I find just one thing that I love (besides Lasagna) and it goes to the birds. I can't even contact the company OverBrook Farms or thecustomerservicedepartment@requestfoods.com and get a good answer for stopping such a great dish......Let's write, write, write. If anyone knows where I can purchase this, please let me know. I will pay thru Paypal and seek overnite shipping. THANKS all and to all a Good Recipe...

I tried to replicate this recipe some time ago. I came very close but it has been a while since I made it and I am not sure if I remember how I did it. I do know that the recipe has corn, bell pepper, onion and black beans in it. I think I used a can of the diced Rotel tomatoes as well, penne pasta and chunks of chicken tenders. I think I made the sauce from cream of chicken soup and Pepper Jack cheese. You could add milk or water to thin the sauce to a proper consistency. I topped the casserole with cheddar cheese and crushed tortilla chips. Bake it at 350* till hot and bubbly about 30-40 minutes. I don't remember any of the amounts I used. I have a husband and 2 sons in their 20's that can eat so I usually make a 9x13 deep dish full and serve it with a salad.
Ruby Tuesday used to make a casserole (Pasta Senora Chicken) that was similar. My son used to work there and he said that the sauce they used was a spinach con queso sauce. Ruby's no longer makes theirs either. I don't think spinach was in the one at Sam's Club at all. Both casseroles were excellent but if they don't sell as expected they pull them. The Sam's casserole was something that I could get for our sons to fix if we were away for the weekend. I am always looking for casseroles that are easy for them to fix when we are out of town. I just may have to make this up and freeze it for them in the future.
I think the first person that posted a recipe might try adding the onion and red bell peppers along with the corn and black beans. I think that is the flavor that you are missing. Other wise I think you are on the right track.
