here,s a couple of caseroles that i cook that have a bit of flavour!chicken pieces,1 finely sliced onion,2 tsp garlic, 1 tsp chilli, 1 tsp dried mint, 1 tsp oregano, salt pepper, lemon juice, 2 cups chicken stock ORchicken , 2 tbpns tomato puree, 1 can tomatoes, 2 cups stock, juice of 1 lemon, salt, pepper. ORsome shallots, button mushrooms, 2 carrots, 18floz stock, 1/2 pint white wine, 1tsp parsley, thyme, black pepper, salt

Ok this is all from scratch nothing out of a packet needed here well apart from stock cubes.
Right, you will need one onion sliced not chopped, two leeks do not cut too thin, four carrots sliced into not too thin circles lol, one oxo chicken stock cube, one knor chicken stock cube and a knor vegetable stock cube.Now crush up all your stock cubes into a jug add boiling water stir weel leave to one side.
Now I use asda chicken fillets don't cut them up there nice as they are (If on a budget iceland do 10 chicken fillets for £2.50).
Lightly flour your chicken, place to one side, now get your onions and place them into a heated frying pan. Not too hot you just want to lightly fry them until soft.
Once they have softened up, remove from frying pan and slowly cook your chicken in the same pan, use more oil if needed and cook until white all over.
Now get your casserole dish place in your onion, 2 leeks, 4 carrots and chicken fillets. Now add your stock, if there is residue still in the jug I add another half pint of water. Place this into your oven at around 150 c. Gas mark i'm not sure? Sorry. But leave that in there on a lower heat if you like, cos this honestly takes 15 mins to prep. Enjoy!!

One very simple recipe my mother used to use is this - a box of stuffing, made according to directions, two cans of soup, such as cream of mushroom, and either about a pound (450 or so grams) of cut up chicken breasts or whole (4) boneless, skinless chicken breasts. Get a nice-sized pyrex or other oven-proof baking dish, place your chicken breasts/pieces into the pan, pour over the creamy soups, un-diluted, then top with the stuffing you have prepared. Bake on about 350 degrees fahrenheit or about 170 centigrade, until the stuffing is golden brown and the soup mix bubbly. This would be really nice with a green salad and crusty bread.
