hm.. ola! are you in UK? I'm Cindy. I'm indonesian people who now live in Beijing. I know a little about making Indonesian sambal, but I'm not sure that all the ingredients are available in UK, just like in Beijing.
All you need is:
- Chilli. A lot of chili. The hotter one, the better. try to find the red and hot one. if you cannot find it, mix the red one with the very hot green small one (we call it 'cabe rawit').
- A kind of small tomato, called 'rampai'. It's about 2.5-5cm in diameter, looks like a peeled-orange in shape, red or orange or sometimes a little green in colour, juicy and less sour than common tomatoes. Notice the more 'rampai' you use, the more juicy your Sambal will be.
- A little of onion. We usually use Indonesian onion. Indonesian onion is smaller in shape, abour 2-3cm in diameter. But I think you can replace it by small amount of common onion.
- Indonesian traditional prawn sauce, called 'terasi'. Just put a little ammount, coz it have a very strong taste.
- Sugar and Salt.
- Garlic (is optional)
How to make it?
1. First, you can boil your chili or not. it's optional. Notice that it you boil your chilli, the next process will be easier, but the taste can be less hot. Take out.
2. Crush chilli, 'rampai', onion, and if you use it, garlic. You can use coffee-seed crusher if you like, but don't crush it too well. Indonesian people likes to crush it in traditional way, using mortar, to keep its natural taste.
3. Put the 'terasi', sugar and small amount of salt inside it. (Put your love inside it too.. hihihi.. ;-P ). Blend it well.
4. It's done. But in some case, we'd like to fry it for a while to match other kind of dish. It depends on what other dish would you like to eat Sambal with. Just try it both. Notice to put small amount of oil, depends on the ammount of Sambal you make, and fry just for a moment till it smells nice.
5. Done. This time, it's really done! ;-P Happy trying..!
