How Do You Make Fondant Potatoes?

I have eaten them in restaurants and would love to know how to make them at home.

all of the above, but i have a healty option, same way of cuting, but i use good veg or chicken stock to cover just until the edge and add small knob of butter on top of each of the potato, in the oven, when soft take them out from the stock

get some large baking potatoes and peel them take a metal circle ring cutter square the potatoes and lay flat on a board put the ring cutter and push firmly all the way through if it becomes stuck push with the end of a rolling pin ,trim the circle top and bottom then place in a baking tray with two packs of melted butter cover with foil and put in a hot oven for one hour or till the potatoes are soft all the way through
