No, not really. That's the beauty of it ;-) I have dined in many Italian restaurants and allways will have a Calzone on my first visit, just to see what the chef in that restaurant makes of it! I have had the classic one many times, say with the bolognese sauce, mushrooms etc, but also with a spicy minced meat sauce, or the best imho a lovely italian beef stew: perfectly seasoned, and simmerd for many hours, so the meat would melt in your mouth. Two week ago i made the Calzone on this site, with the ricotta cheese, which is rather sweet. I then made a more spicy one, makin the filling like the chicken cacciatore also on this site. In stead of the chicken legs and stuff, i used diced chicken breast, adding some extra tomato puree and left it simmering for an hour of two on very low heat. Came out very nice! So basicly: dare to experiment! Good luck! IC
