If I'm enjoying a date and thinking I might want to see this guy twice, I'll touch his hand first. His palms probably won't be sweaty then, and if I want him to kiss me later, I'll guide his arm around me and lean on him a little bit.

Start with a touch on the arm as a gesture in a joke or something to break the physical barrier before you try anything else. From there go on to something like a hug or hand on her shoulder to point something out. See if she is receptive to this before you try anything else. If she's not, then just give her more time.
