Grilled Cheese Sandwich With Pulled Chicken Recipe

This toasted cheese sandwich comes with a magic ingredient – pulled chicken. Barry Lewis from My Virgin Kitchen shows you how to make this sublime snack.

INGREDIENTS:
3 Chicken Breasts
2-3 tbsp BBQ Sauce
2 tbsp Pineapple Chunks
6 Slices of Bread
100 g Cheddar Cheese
2 tbsp Butter
Small Tub Of Coleslaw To Serve

STEP 1: PREPARE CHICKEN
Place your chicken breasts into a medium sized saucepan. Cover with water and bring to a simmer. Cover with a lid and leave the chicken to poach for 10 minutes until cooked through. Drain and then using two forks shred the chicken.

STEP 2: MIX IN BBQ SAUCE
Return the chicken to a saucepan along with the bbq and the crushed pineapple. Stir and allow to cook for about 4-5 minutes until hot throughout.

STEP 3: MELT CHEESE
Butter one side of each of your slices of bread and then flip over so the butter side is face down. Add a layer of thinly cut cheese, the spoon over a layer of the chicken mixture. Follow with a second layer of cheese and then top the sandwich with another slice of bread butter side up.

STEP 4: FINISH AND SERVE
Heat a frying pan and add your sandwiches, one at a time. Cook until both sides are brown and the cheese has melted, flipping the sandwich half way through. Serve with coleslaw and some more BBQ sauce.
