How To Make Pizzas

Tess Ward shows you how to make two types of pizza: a thin and crispy Margherita pizza topped with a few olives and basil (just don’t add olives if you don’t like them); and a red onion, goat’s cheese and rocket pizza.

300 g strong white flour
1 tsp yeast
1 tsp salt
1 tsp sugar
olive oil
4 tbsp tomato puree
2 tbsp warm water
3 garlic cloves
sea salt
1 tsp dry oregano
1 plum tomato, sliced
1 mozzarella ball
handful of fresh basil leaves
1/2 red onion, finely sliced
1 wheel of goats cheese
1 large handful of rocket
1/2 lemon, juice

Temp:250° c – 480° f

Step 1: Make Your Pizza Dough
Sift the four, salt, yeast, sugar into a bowl and pour in 1.5 tsp of olive oil. Create a well in the middle of the ingredients and pour in 200ml of water. Mix everything together, then remove the dough from the bowl and work it on a floured surface using the heel of your hand until it has become very elastic. Put it in a bowl, cover with clingfilm and leave to rest for 10 minutes or so.

Step 2: Knead Your Dough
Dust your surface with a sprinkle of flour, then roll out half the dough using a rolling pin, moving the pizza around after every roll. Keep rolling your pizza until it’s a thickness of a £1 coin. Don’t worry if your pizzas are not perfectly round. Using your rolling pin transfer your base on to a lined and oiled baking sheet. Repeat with the second ball of dough.

Step 3: Make A Tomato Base
Mix together your tomato purée with the warm water until thoroughly combined. Peel and chop 1 clove of garlic and using the back of your knife grind it into 1 pinch of sea salt until you have a garlic paste. Add to the puree. Pour in 2 tbsp olive oil, 1 tsp of dry oregano and a pinch of salt and mix everything together.

Step 4: Make Your Tomato Pizza
Spoon the tomato topping over the top of your first pizza and spread over evenly. Scatter over the chopped tomatoes and pieces of your mozzarella ball. Sprinkle over a few basil leaves and drizzle over some olive oil.

Step 5: Make Your Goats Cheese Pizza
Peel and finely slice two garlic cloves. Add a pinch of salt and with the back of your knife grind the garlic cloves into the salt to create a paste. Pour over 2 tbsp of olive oil and mash the garlic into the oil. Transfer the garlic and the oil over to the second pizza and spoon evenly over the base. Drizzle over another tablespoon of oil. Top your pizza with a the finely sliced red onion and the goats cheese. Scatter over the chopped parsley and season with pepper. Finish with a drizzle of olive oil.

Step 6: Bake
Place your pizzas into the hot oven for about 10-12 minutes until the sides have turned brown and are beginning to crisp up. Squeeze the lemon juice over the fresh rocket and place on top of the goats cheese pizza. Cut the pizzas into slices and serve.
