Michael Underwood, father of two and celebrity MasterChef finalist, once again shows you how to cook fun dishes for kids, from naughty deserts to healthy meals. Here he shows you how to make a perfect little sweet treat – iced orange cakes.
250 g Salted Butter
200 g Caster Sugar
120 g Icing Sugar
4 Medium Eggs
250 g Self Raising Flour
1 tsp Ground Cloves
Finely Grated Orange Zest
120 ml Freshly Squeezed Orange Juice
STEP 1: MIX BASE INGREDIENTS
Preheat the oven to 180C. Beat the butter and sugar together till pale and fluffy. Add one egg into the mixture at a time, beating thoroughly till well incorporated.
STEP 2: MIX REMAINING INGREDIENTS
Mix in grated orange zest and ground cloves. Then gradually fold in the flour and orange juice.
STEP 3: POUR INTO TINS AND BAKE
Pour mixture into cake tins. Bake in preheated oven for 20-25 mins, or until a knife comes out clean when inserted into centre of cake.
STEP 4: MAKE ICING AND ENJOY
Once the cakes have cooled completely, make your icing by gradually adding orange juice to the icing sugar until it’s a thick consistency. Spoon over your cakes and leave to set.
