What sort of expenses can I claim back from my employer?

You can claim back most expenses from your employer, provided that your contracted employment provides for it. Check that first. If you're not allowed to claim expenses, make sure you don't incur those expenses. The kind of expenses you're probably going to be able to claim back are mobile phone charges, travel expenses or hotel accommodation, if you've had to stay away for the night. Those are the most common expenses.

Is there a cap on what I can claim on expenses?

Legally, there isn't a cap on the expenses that you can claim back. It's worth checking your contract of employment. There may be a capping of expenses set out in that. Most importantly, I think you have to incur reasonable expenses. Don't book a five star hotel if you can book a three star hotel, because a five star hotel probably isn't going to be considered reasonable. Just don't be excessive in what you spend.

Do I have to pay tax on my expenses?

Generally, expenses are considered to be tax free, so you won't have to pay taxes on that.

Can I claim travel to and from work as an expense?

Travelling to and from work each day is considered to be a private journey and is not an expense, so generally you can't claim that back. However, if your place of work is your home and you have to travel into the office on the odd occasion, the likelihood is you probably can claim that back as an expense. Generally, though, you cannot claim back the cost of travelling to and from work.
