The key to not get drunk is to know your limits. It's difficult when you're in a profession where alcohol plays a big part to not occasionally slip over the edge, but I find it's quite easy to know your limits, and to know where to draw the line. And even though you may be tasting dozens of beers, you may only be tasting small amounts of those beers, so it's quite easy to control them as well.
