If you make a mistake when you are doing a goatee, just scrap it and shave it all off. Then you can just start again. Because, it's like you'll never be able to repair that. A goatee can grow back quite easily, so it's not like we're talking a beard that you've been pampering for the last three years. Just go back and do it over. The sideburn is a little bit more tricky because you don't want to end up with sideburns that go all the way to your ears. So, you might want to just leave it there, and hope it doesn't get very noticed, and in a couple of days it will be back to okay.
