How can I prevent salmonellosis?

The main prevention for salmonellosis is to make sure that the food that you are preparing and serving to other people doesn't sit around at elevated temperatures for any longer than it needs to be and here we're talking about no more than an hour or two. If you start getting into four or five hours of something like egg salad sitting around it'll start growing, or tofu, for the vegetarian, tofu salad, it could start growing levels of salmonella that can be quite toxic to people, and some people will have a much lower tolerance to it than others. People with weakened immune systems, people who don't normally eat that kind of food may be more susceptible. So if I went to the marketplace in Central America and ate the egg salad there, even though the levels in that egg salad may not be high enough to sicken everyone that lives there, I as the tourist who isn't used to eating that food and those levels of salmonella, I may be the one that gets sick because I'm the tourist.
