There’s nothing more comforting than a fruit cobbler, but add in orange and cinnamon then you’re clearly onto a winning recipe. Kids will love this.
800 g Plums
200 g Plain Flour
80 g Granulated Sugar
80 g Unsalted Butter
150 ml Milk
1 tsp Ground Cinnamon
Zest and Juice of One Orange
Two Cinnamon Sticks
1 tbsp Brown Sugar
2 tsp Baking Powder Salt
STEP 1: REMOVE PLUM STONES
Half and de-stone the plums and place into a saucepan along with the juice from half an orange, the two sticks of cinnamon and the brown sugar. Bring to a boil and then allow to simmer until the plums are soft and have started to caramalise. Remove from the heat and allow to cool completely.
STEP 2: MIX TOGETHER DRY INGREDIENTS
Preheat your oven to 180C. In a mixer or using your hands mix together the flour, baking powder, salt and baking powder until they form fine breadcrumbs. Mix in the sugar, orange zest and ground cinnamon.
STEP 3: SPOON PLUM MIXTURE INTO DISH
Pour in the milk and mix until your have a thickish paste. If the mixture is too thin add some more flour. Spoon the cooled plum mixture into a baking dish and add large spoonfuls of the mixture randomly on top. Don’t worry about covering up the whole of the fruit. Transfer the dish to the oven and leave to cook for 30-35 minutes until the fruit is bubbling and the topping is cooked through.
STEP 4: LEAVE TO COOL AND GARNISH WITH CUSTARD
Remove from the oven and allow to cool slightly before serving with ice cream or custard.
