Here’s how to make frosting without powdered sugar.
1.5 cups granulated sugar
6 egg whites
Pinch of salt
Add to a bowl 1 ½ cups of granulated sugar. Then add 6 egg whites and a pinch of salt. The salt helps break down the albumen in the egg and make it a little less ‘eggy’. Give everything a little mix then put the bowl over a pan of boiling water.
Continue mixing and keep the egg moving in the bowl while the heat is absorbing through the bottom of your bowl.
It will take approximately 7 minutes or until such time you feel the heat coming out of the egg whites. Initially the mixture will become very gloppy then very thin and you’ll feel the texture change under your whisk.
After 7 minutes, whisk the mixture at a high speed until it cools down.
Once the mixture is of a thick consistency, take off the bowl and test it by removing the whisk and look at the end of it – if it’s a thick, shaving foam-like consistency, the frosting is ready.
