How To Make A Gluten Free Pizza

Healthy chef Madeleine Shaw shows you how to make a gluten free pizza, with a base made of chickpeas and plenty of green toppings, it’s full of goodness.

INGREDIENTS:
60g Chickpea Flour
120ml Water
Seal Salt
1tsp Thyme
2tsp Coconut Oil
Grind of Pepper
2tbsp Tomato Passata
1/2 Green Pepper Thinly Sliced
6 Green Olives
A Handful of Rocket
85g Cashews
3 Garlic Cloves
150ml Olive Oil
20g Kale
20g Fresh Mint
20g Coriander
20g Basil
Zest and Juice of 1 Lemon

STEP 1: MIX INGREDIENTS
Preheat the oven to 200 C. Mix the flour, water, salt, thyme and pepper together and let this sit for half an hour.

STEP 2: COOK CHICKPEA BATTER
Heat the coconut oil in an omelette/small non-stick pan on a medium heat. Pour the chickpea batter and cook for a minute or so the flip and cook for another minute on the other side.

STEP 3: TOP BASE
Place the base on a baking paper lined tray, smear over the passata, throw over the olives and pepper. Bake in the oven for 10 minutes.

STEP 4: MAKE PESTO
To make the pesto place all the ingredients apart from the oil in the food processor blitz. Slowly add in the olive oil.

STEP 5: FINISH AND SERVE
Top the pizza with rocket, pesto and a drizzle of olive oil.
